Ingredients (Serves 4)
2 cups baby spinach, washed and spun dry
1 (15 oz) can chickpeas, drained + rinsed
1 field cucumber, halved lengthwise + sliced
½ small red onion, thinly sliced
2 Tbsp fresh lemon juice (about ½ lemon)
3 Tbsp Rallis ice pressed® olive oil, plus an extra drizzle for serving
1 tsp Dijon mustard
½ tsp honey or maple syrup (optional)
¼ tsp sea salt, plus more to taste
⅛ tsp freshly ground black pepper
Pinch of red‑pepper flakes (optional)
Fresh parsley or mint, chopped (for garnish)
